Week 47 Update

Hi Friends!  I’m back with my weekly (I’ll throw that term around loosely) update.  I have lots going on, so I’m glad I’m re-motivated to get back to my list.  Here goes:

#19 – Put up some wall decor in my living room – Complete.  As mentioned in my last post, I found these fabulous frames @ Bed, Bath, & Beyond.  I feel like the room has been transformed and feels more homey (not as in homey the clown).  Me likey!

#20 – Cook for a whole week; no take-out – One of our budget busters is going out to dinner, ordering take-out for any meal, etc.  In an effort to try to combat that, I decided that we would just try to avoid take-out of any kind for a whole week.  Thanks to my whiteboard (see below), we’ve been doing well.  Let’s see if we can get through the next two days (Friday/Saturday are the biggest offenders).  I have to admit, this is equally as hard as #82 (24 Hours w/o a sarcastic comment). 

For the record, this is my ‘planned menu’ – I purposely throw in some easy meals in case I get lazy after work!

#54 Try 10 New Recipes – So tonight for dinner I was supposed to make Spinach Stuffed Chicken (I swapped out Tuesday/Thursday because I was exhausted when I got home and didn’t want to put effort into dinner), but when I got home tonight, the idea of Spinach Stuffed Chicken just didn’t thrill me.  So, after raiding my cabinets, I found a can of Campbell’s Cream of Chicken soup and this recipe (see picture below).  It was fab, except I had to tell the babes that I used “Italian Seasoning” instead of  pesto (he doesn’t like it) just to get him to try it – he said it was delicious! I’m sure I could healthify it, but the first go I made sure to make it as is:

#97 – Learn how to make guacamole – So, after a brief tutorial of avocado’s with my co-worker (thanks Jenn), I finally made my own guacamole.  (It’s pretty sad that I thought if the skin of the avocado was bright green it was ripe – wow I was wrong) and that explains why I was having setbacks)!!  Holy Guacamole!  It was fab and I ate it all in one sitting (yep, piggy right here).  Click here for the recipe (and I promise you won’t be disappointed!!).
